Panipuri, by the name itself anyone can imagine how we drool over this food. It is one of the popular street foods in India and Nepal. Panipuri has different names such as golgappa, fulki, puchka. People prefer their local language and the name varies from place to place.

What is Panipuri/golgappa?

Pani means Water and Puri means dough balls

Panipuri is a round-shaped ball where crispy fried dough balls (puri) are stuffed with potatoes, peas, coriander, onions mixed with lots of mouthwatering spices. And the puri is then drenched in sour and spicy water also known as Pani or rash. The whole panipuri ball easily fits in one’s mouth. The aroma and spices mixed in panipuri make the dish more appetizing. The heavenly flavor will hit your taste buds, one plate will not be enough to fill your cravings.

Panipuri is the favorite snack of many youths especially girls are crazy over this food. They can eat panipuri any day anywhere. You can find panipuri stalls everywhere; there is no such place where you can’t find panipuri junctions.

The taste of panipuri especially the Pani varies from place to place, the golgappa turns zesty just because of the sweet, tangy Pani or rash. Some of the panipuri stalls do serve 5-6 varieties of Pani to fulfill their customer’s cravings.

Panipuri recipe/Golgappa recipe is very quick and easy to make as you can find readymade puri around the local grocery store. Making puri is one of the time-consuming steps however you can just go and buy some readymade puri and make it easier for you. Let’s start with the ingredients we need

Ingredients

For puri or dough balls

  • 250 g plain flour
  • 1/2 tablespoon baking soda
  • lukewarm water
  • oil to fry

For Stuffing

  • 4-5 Boiled potatoes
  • 1/2 finely chopped onion
  • 2-3 green chilies chopped
  • 1/2 cup soaked peas
  • Salt to taste
  • 1/2 tablespoon chat masala

Panipuri Pani /rash (Amilo Pani)- Version 1

  • 5-10 Fresh mint leaves
  • Salt to taste
  • Half lemon squeezed or lime juice
  • 1 tablespoon chat masala
  • Red chili powder (as per your preference)
  • a cup of water

Panipuri Pani/rash (Khatta Pani)- Version 2

  • 2-3 tablespoon lapsi or hog plum paste
  • 1 tablespoon chat masala
  • ½ Tsp Red chili powder
  • 1 ½ Cup Water
  • Salt to taste

How to make panipuri

Step 1: First of all, in a vessel mix plain flour and baking soda together. Add lukewarm water little by little and knead thoroughly to make a perfect dough. Cover it and leave it overnight so that we can get perfect round dough balls

Step 2: Remove the plastic and divide the dough into small balls. Stretch out into a thin round shape

Step 3: After that heat up some oil in a pan and fry it to make a perfect dough ball

Step 4: For Stuffing

Mash the potatoes and then add chopped onion, chilies, green peas, salt, chat masala, and chili powder or flakes. Mix everything properly

Step 5: For Amilo Pani

Grind mint leaves and add a cup of water. Then add chat masala, salt to taste, chili powder, and squeeze some lemon juice.

Step 5: For Khatta Pani

Take 3-4 tbsp of lapsi paste and add a cup of water and mix it properly. Then add chili powder, salt to taste, and some chat masala.

Step 6: At last put the stuffing inside dough balls or puri and enjoy it with the delicious Pani or rash.
