Chicken fried rice is the comfort dish of cooked rice made with varieties of vegetables and chicken. Moreover this easy fried rice is a popular and easy weeknight meal and especially meant to re-purpose leftover rice from a day or two days before. It is perfect for busy weeknights as it takes only 15 minutes to cook.
The chicken meat is juicy with added spring onions, green peas, chili flakes, soy sauce for extra added flavors. If you don’t want chicken make it with varieties of veggies like broccoli, carrots, string beans, etc. However you can add extra scrambled eggs that make the dish more delicious and overwhelming.
.The delicious homemade chicken fried rice is very easy to make recipe will hit your taste bud and the aroma will attract anyone to the kitchen. You can make it as spicy as you can by adding extra green chilies or chili flakes as per your preference.
Today I will be using chicken breast meat to prepare spicy chicken fried rice with added veggies.
Ingredients for Chicken Fried Rice
- 2 cups cooked rice
- 2 chicken breast
- 5 tablespoons of oil
- 1 chopped onion and spring onions
- 1 chopped capsicum and green chili
- Finely chopped tomato and carrot
- 1 cup peas (matar)
- 1/2 tablespoon turmeric powder
- 1/2 tablespoon cumin powder
- Chili flakes
- Salt to taste
- Soy Sauce
- Chopped coriander
Let’s make it
1: First of all, take a wide frying pan and heat up the oil. Season chicken breast with salt and other spices and then and fry it till it turns golden brown and remove it from the pan. Cut the chicken pieces into a cube shape
2: Add little oil on the same pan, then add chopped onion, capsicum and green chili
3: Add half tablespoon of turmeric powder and salt for taste
4: Then add finely chopped tomato and carrot along with the fried chicken breast
5: Stir it properly and add half tablespoon of cumin powder and chili flakes as per you preference
6: Add fresh cooked rice or can use old (a day before) leftover rice with a cup of green peas
7: Toss the rice and then mix everything properly
8: Add some soy sauce and peas, then thoroughly mix it
9: At last garnish fried rice with coriander and scallions or spring onions on top
10: And it’s ready to serve 🙂
