Veg Pulao is one of the basic dishes made often in many homes. It is a one-pot rice dish made up of basmati rice along with varieties of vegetables. Similarly, some herbs and spices need to be added to our veg pulao in order to provide more flavor and spices.
Pulao can be prepared in different styles. You can make pulao either without veggies or with lots of veggies and added dry fruits. Simple veg pulao recipe with lots of added fresh vegetables gives an aroma It is also one of the most popular dishes in parties and buffets too.
Veg Pulao is a very easy recipe that one can prepare at their own kitchen. A bowl of veg pulao recipe contains 240 calories in total. You can either choose an instant pot or pressure cooker to make delicious veg pulao. Vegetable pulao in a pressure cooker takes lesser time than a veg pulao in a pot.
Ingredients for Veg Pulao
- One cup of shredded cabbage and carrot
- Two cups of rice (preferably basmati)
- One finely chopped onion
- One finely chopped capsicum
- Five cups of water
- Five tablespoons of oil
- One tablespoon of ghee
- Cloves and Cinnamon
- One tablespoon of jeera (cumin seed)
- Finely chopped green chilies
- Chopped ginger and garlic
- A handful of cashew nuts and raisins
- One finely peeled and chopped potato
- A handful of peas (matar)
- Salt to taste
- A pinch of red chili powder
- Chopped coriander
Let’s Make it
1: First of all, let’s rinse two cups of rice and soak in water for half an hour
2: Take a wide frying pan and heat five teaspoon of oil
3: Add cumin seeds, chilies, cashew nuts, chopped ginger-garlic along with cloves and cinnamon
4: Add onions and stir it properly till it gets light brown and then add chopped potato
5: Then add capsicum, cabbage, carrots, and green peas. Let it cook for at least 5 minutes
6: Add some salt and a pinch chili powder as per your taste
7: Then add the rice and 5 cups of water and cover the lid tightly. You can also make it in a pressure cooker
8: Put the heat on low flame and let the rice cook for 15 minutes approximately
9: Once it’s cooked, add some coriander and raisins on top to garnish
10: At last add one tablespoon of ghee on top for extra flavors
